Meal Prep: Low Carb West Indian Breakfast Muffins

Hey Fancy Faces and welcome to my kitchen! You requested healthy recipes and your girl delivered. This is 1 of 3 meal prep videos I've created to help those of you who are in the process of, or want to get into shape but you're stuck for ideas of what to make.

Ingredients

Minced beef (or any mince of your choice)

Chilli flakes

Garlic (2 cloves)

Mixed herbs

Celery salt (or sea salt)

Black pepper

1/2 Onion

1/2 Red bell pepper

3-4 White mushrooms

Pura Coconut oil blend spray (or any oil you want)

Plantain

Handful of spinach

Cheese (sliced or grated)

Equpiment

Muffin tray

Measuring jug

Kitchen towel/grease proof paper

Whisk

Icing spatula (or a butter knife)

Tupperware

Instructions

Preheat the oven to gas mark 5 (190 C)

Season the mince with garlic, black pepper, celery salt and mixed herbs.

Fold the red pepper, onion, and mushrooms into the mince. 

Spray the muffin tin cups with oil then spread it around with kitchen towel (or grease proof paper).

Take a small lump of your mince mix, roll it into a ball in the palm of your hand, flatten it then press it into the muffin tin to make a 'cup' for the filling.

Whisk 6 eggs together with celery salt and black pepper, then pour equal (small) amounts into the mince mix cups.

Cut your plantain into chunky slices and place one piece in each muffin.

Roughly chop your spinach, place it on top of each muffin then top it with cheese.

Bake for 25-30 minutes.

Remove from muffin tray with the icing spatula (or a knife) and place into your Tupperware to freeze once cooled.
